Perfect Summer Popsicles

So!  Yesterday I came home with a set of popsicle molds.  I knew that if I dared let this information leak to my 6 year old we would indeed be making popsicles today.  We made popsicles today.  But, before we could start, I needed a tasty recipe.  I searched online this morning and was inundated with popsicle possibilities.  The only problem was, I didn’t have exactly what most called for or I didn’t want to use what a lot of the recipes required.

I knew I wanted to use these…delicious raspberries from my awesome neighbor’s backyard patch.  I had some cherry jello, but read that just using jello can result in really hard popsicles.  Not that I’m a popsicle snob and/or connoisseur (seriously, who has time for that crap?)  BUT, I personally do not like it when they are brick hard like a block of ice.

YOGURT!!  Ha, yes!  Maybe this has already been someone else’s brain child for years, but I felt pretty original when I thought of it.

We 1st filled each mold with several raspberries.  Then we made the jello and mixed in 1 container of yogurt (brilliant!).

Wisk, wisk, wisk.  Fill molds (duh).

Freeze for at least 4 hours.  Oh yeah!  Perfect summer popsicles!
